First one need find a collision (where's the math - nothing on that in the 'paper'), then one must get a majority of the network to accept that this new tx chain need be substituted for the tx at that position in the chain that they have agreed to accept since months/years/decades.

Is it possible? Sure - in the sense that collisions are possible. Minus some significant derating for having to overcome settled history. Is it computationally feasible? Not bloody likely. After that gate is passed, is it socially feasible? I say nay.

I don't see "normal" lab meat not becoming mainstream, but I wonder if people would remain put off from human meat if the biggest deterrent (killing humans) is removed.

It seems gross to me on a more emotional/impulsive level, but rationally speaking I don't see anything speaking against it.
