Can't help you as far as getting connectors, but once you get them can you keep the thread updates as to how well they work?  The reason I am curious is because I saw a thread before about those adapters and people were having troubles getting more than 1 to work.  It would be nice to see if you can get em' to work.

I would recommend a giant fan, like the one pictured above.  They are pretty cheap, and it should do the trick.

VisionTek 6950 $320 together, or $160 each (plus shipping) - These GPUs both mine at speeds up to 450khps.  They are at the stock 1408 shaders.  These cards do not feature a dual bios, so I haven't tried to flash unlocked shaders onto either of them.  They are 2 slot cards, but they have a massive heatsink so they take up 3 slots of space.  These are the 1GB edition cards which might seem a little small but they still could handle games with up to 4xMSAA without VRAM becoming a problem.  Finally, as for temperatures these cards are great.  Under full load the cards only reach 58 degrees Celsius with ambient temperatures of 75 degrees F and a fan speeds of ~55%.

One of my 7970's gets 655khps at 1000MHz core clock, 1500MHz memory clock, and 1.163 voltage (won't let me go any lower).  However, I have gotten this card to reach past 1.2MHz on the core at its maximum voltage of 1.256v.  The thing is, the Litecoin mining doesn't scale up as I would hope. I can never get past 660khps no matter what I do.  I would like to break 700khps, as I think this card is capable of it.  At this point though, I think I need some guidance as to what I am doing incorrectly

I would recommend the MSI Z77a-G45: http://www.newegg.com/Product/Product.aspx?Item=N82E16813130645

It is pretty cheap and you can get 6 gpus on there, which will give you an extra slot to expand.

As far as how to set it up (for 6 gpus, if you are only going to be doing 5 you should still be able to understand how) you will need 3 x1 to x16 powered adapter cables and 2 x16 to x16 riser cables.  Refer to this image (credit to ssateneth) https://dl.dropboxusercontent.com/u/9768004/z77ag45.jpg

If you only do 5 gpus, you wont need to pay attention to the presence short.  If you decide to go for it, look at these pics: http://blog.zorinaq.com/images/pcie-short-schematic.png and http://blog.zorinaq.com/images/pcie-short-photo.jpg

You simply plug the adapters and riser in the slots and then put your cards in.  Then you should be good to go.

I know that you can have 5 GPUs on a motherboard for mining, though I know absolutely nothing technical about how that works. Is it possible to run 4 cards in CrossfireX/SLI mode for gaming with the 5th one idle, and then leave the 4 Cards in CFX/SLI with the 5th one separate for mining?

Yes you can do this.  4 cards is just the maximum for gaming, you can have as many as you want for compute purposes.  If you dedicate any amount of cards to a xfire setup you can use the rest for whatever you want, in this case mining.
