as for which address, you're gonna have to trawl through them all to find which ones have some balance on and sign them individually. i had to do that with mycelium and it took goddamn ages.

Signing a message in Electrum is easy af https://www.cryptocompare.com/media/1382008/9.png

After you click Sign/Verify you put the message that you get from the website, enter the wallet password and then paste the signature into the website.
