The earth is a sphere, it's turning. Whenever the sun (our local star) is at its highest point during the day, the people call it noon. Very often that is close to 12 o'clock lunchtime. But as the earth is turning, the sun is in that noon spot at a different absolute time for each spot. As there is no absolute spot on the round earth, people invented one ... and because back then the empire wasn't the US but the UK, they placed in in Greenwich, England, which is an island on the fringe of Europe (that peninsula in the West of the Asian continent). They called it GMT "Greenwich Mean Time", and probably that newer empire later renamed it to "Coordinated Universal Time (UTC)"
