Yeah it is true that in so many countries it is still legally not possible to buy real life products and services using crypto.
Correction: In no country can you legally buy goods and services except with the national (local) currency. With the exception of those few countries, like El Salvador, that are trying to give bitcoin legal status.

No need to do this under the table. Ordinary P2P trade directly between people. No one except the two participants in the transaction will know what was purchased and for what amount.
there are communities in such countries and small wonders who accept bitcoin for their services.
besides that you can buy online services and digital products with your bitcoin.
If only sellers (more) were ready to accept bitcoin as a means of payment, there would be no problems with the purchase.

Bitcoin doesn't need to be "legal" for people to use it.
Bitcoin doesn't have legal status in almost all countries, but at the same time it is not prohibited almost anywhere.
but still those countries have huge number of crypto users. that proves that no one can control crypto. govt, banks. none.
This is the whole miraculous power of decentralization.
