I do not think Enrique will want to play Dembele seeing that is recovering, I believe he understands the risk that comes with it and may not  be willing to risk it just like that already, he definitely will consider the health of his player too because if he doe not, in the long run, it will be a problem to them that they are going suffer if they do not allow a better recovery of their key player so when he is back he will stay optimal and very productive.  The reserve squad is pretty fair and can do a great job so they can go ahead to field them till Dembele is back to occupy his position again.

So he should probably play 2 out of every 3 games so that they could do a lot better, without that they are going to end up losing a lot of games.

If Dembele's playing poses a significant risk, I don't think he should play. Nice are given 3.75 and Marseille have 1.96 odds. Would you be surprised to see Marseille losing points? I wouldn't honestly.    I also see it as not a very easy game just as bookmakers.

Nice lost their last 2 league games, yeah. But they have a good home record against Marseille in their last 2 games too. Double chance on Nice @1.87 or BTTS @1.62 would be my options.
