Nice thought. First you need think the possibility of the AI knowing how Bitcoin was created and was functioned to operate. I doubt any AI has access to that information. The only way AI can do this is when the developers of Bitcoin get to share the information to the AI then the AI can do even more better to increase the functionality and accuracy of the first script/code giving to him to study.

The brain behind AI is human. Everything it does is out of the information it was giving permission to have access to. If you notice not all response AI give some of them it tells you they have no access to this source or information. Everything will depend on the level of AI, because at the moment (from what we know), AI is only able to simplify some aspects of human work, but it is not able to create something on its own. Is Bitcoin the end product? Of course, it is not. It's an open-source and its code can always be changed, which means that we can implement anything we wish if there is an agreement and green light from everyone. Keep in mind that AI isn't an intelligence itself but a combination of very good algorithms. AI is not a threat for Bitcoin, there are lots of talented software developers that have never been a threat to Bitcoin. A popular open-source code can't have a threat because the whole internet works on making the code better.

In reality I don't see any worry about AI for Bitcoin. I think it's just the current buzzword, and people are not sure what it can do and what it cannot do.
