Mas, talvez isso seja uma particularidade de cada banco de origem da transação, e quem sabe em algum deles seja possível ver o CPF completo.
A minha opção pelo número de telefone é porque todos os meus amigos e familiares possuem ele, então achei mais prudente passar esse dado do que o meu CPF ao receber dinheiro de pessoas conhecidas, mas de fato... no caso de um vazamento, essa informação acaba se tornando mais sensível.

Esperança agora é de que o pagamento por aproximação (NFC) via PIX avance rapidamente, talvez isso faça eu voltar à usar meu smartphone nas transações.

Na moral, qualquer tecnologia à favor da segurança só irá lhe proteger no caso de assalto relâmpago ou furto, pois em um roubo violento a maioria das pessoas entrega tudo o que tem e responde o que lhe for perguntado sem nem pensar o contrário.

O maior problema é certamente as fraudes que vem logo em seguida.

Eu mesmo removi todas as chaves de CPF e e-mail vinculadas ao PIX. Tenho apenas um número de telefone registrado como chave um banco que uso mais para transferência e passo à amigos e familiares uqando preciso.
