Multibit or Electrum, your choice. They are lightweight clients, that means the wallet is still on your pc, like with bitcoin-qt so it is secure.

Tax evasion is rampant in Italy. In Europe only Greece has a higher tax evasion rate.

Stay out from bitcoin mining, to mine bitcoin you need to get ASICs otherwise you are losing time. CPU and GPU mining is dead for bitcoin.

But you can still mine other coins, like litecoin or primecoin. Litecoin can be mined with the GPU but as other people said, AMD gpus are better at that, much better. CPU mining litecoin is a bit pointless, given the vastly superior performances of GPU. Primecoin can be mined only with CPU. Same for quarkcoin and some other coins.
So, as other suggested, put your CPUs on CPU only coins. As for your GPU, you can use them for litecoin (or any other coins using the scrypt algorithm) but since you have nvidia gpus, don't expect good profits

I am wondering if that is legal or not.

Some months ago the bitcoin foundation received a letter saying that they were money transmitters and had to get the licenses or cease 'money transmitting'. Of course that was epic bullshit.
What if this case is the same? Just a bullshit letter without any sense? What is the 'bitcoin foundation' opinion about that? Are they doing something about that?
