The market is so volatile at the moment, the price is swinging in either direction a significant amount, multiple times a day.

Should’ve happened long ago. It’s a waste to use bitcoin txs to record every movement of an IOU. It was always expected that market forces will push this activity out. Eth is better suited for this, but still wasteful, eventually USDT will move to something even more centralized
