Is there a simple guide on how to activate / take advantage of Proof-of-Stake (POS) in DEM ? Seems to me that it is overly-complicated and un-intuitive at this point. If I understand correctly, a certain amount must be committed to proof-of-stake minting, which would be analogous to moving money from a checking to a savings account, or a certificate of deposit (CD). Is there a simple way through eMark-qt or eMarkd to activate POS and commit a certain amount to it ?

I asked in this thread for DEM to be considered for addition to Cryptsy: https://bitcointalk.org/index.php?topic=246679.1700But they wanted to know if I was the main developer which I am not. So it might pay for a dev to post a request for DEM to be added.

We are still getting this:
ThreadRPCServer method=submitblock ******* exception encountered ******* /usr/bin/ocoind[0x56832c] /usr/bin/ocoind[0x41f25f] /usr/bin/ocoind[0x423cd8] /usr/bin/ocoind[0x48bb73] /usr/bin/ocoind[0x4c1455] /usr/bin/ocoind[0x5169fc] /usr/bin/ocoind[0x4ddd6b] /usr/bin/ocoind[0x4dffd7] /usr/lib/libboost_thread.so.1.49.0(+0xe6e9)[0x7f569674a6e9] /lib/x86_64-linux-gnu/libpthread.so.0(+0x7f8e)[0x7f569594ff8e] /lib/x86_64-linux-gnu/libc.so.6(clone+0x6d)[0x7f5694e5be1d]
and we dont know how to fix that, or what to change at our stratum code.

Can anyone offer any advice on the best stratum-mining fork to use for a SHA256 PoW/PoS coin pool?

Yes, very good coin, it's basically PPC with the two main problems fixed, those being the slow 10min block rate, and the crazy 520 confirms for newly mined blocks. DEM fixes both problems nicely with 2min block rate, and far more practical 100 confirms.
