I'm more than confident that a win over Arsenal alone won't get the team back on track, or as many believe - they can fight for any top again. Yes, beating a team like that is a morale booster, but it's not enough and Chelsea still have too much work to do, I  think top 5 is even close to happening this season

Arsenal are competitive for EPL title this season, we should expect the very best performance from Gunners because everything will work out smooth for them. Look at how VAR has been making so many mistakes in the various matches since last year. The inconsistency from this tech is also making so many clubs are getting lots of disadvantages. There's no perfect tech and i knew it but VAR can do better if there will be reliable people who handle it better. The Blues have done a great job in their last 2 games but they still lack one thing, shooting from outside the 18 yard box. They can't beat any stronger opponent with this playing till they get inside the 18 yard box or even passing till they pass the ball into the net, you see that's where they have a problem too much passing, they forget when to take shot and surprise the opponent. With this style of play teams are not too bothered about blocking shots from the Chelsea players except is inside the box.
Going against Arsenal who have those players that can do both the passing and taking outside shots will be very bad for the defense of Chelsea because as it stands the back line of the Blues ain't strong enough to stop the runs of Arsenal's wingers, not only the Gunners but other good teams that have good wingers. I agree with you, and in my opinion Odds @ 2.17 is very tempting for the possibility of a fairly large win.
I will not miss this match to bet on and in fact I plan to bet a large amount on Arsenal winning.

For now, what you said regarding Chelsea is correct, it is quite surprising to see that Chelsea is only able to achieve positive results when they meet clubs that are classified as mediocre. Of course, this is not in line with their shopping list last summer, which looked extravagant but did not meet expectations and provide the expected impact, for now I also doubt that Pochettino squad can finish in the UCL zone. And as you said Chelsea it is difficult to compete with other top clubs in the EPL.
