It could go both ways and I would decide depending on your experience with the website. Some websites have this obvious downward odds correction. I am sure you have seen this here and there that once you wanted to place that bet, it didn't work and when you tried again the odds were down like 5%. But it is not how all of them work. That is why it would be risky to accept it with websites you don't fully trust, but in general it is a smoother experience if it is activated.

I think there are some reasons why people keep gambling even when they are stressed and not in the emotional state for it. Some of these reasons I have identified are

I prefer not accept changing odds automatically. If the odds change you can just click again and accept the new value, but if you automatically bet with a very different odd and you can't cancel there is a chance you are stuck with a bad bet. Not many times I need betting so fast that I need automatically odds changing.

For live games maybe it can make sense because the odds can drop many times in a few minutes.

It seems that the mentality of some of our players is still quite bad in looking at things which makes repeated cheating always a big problem.

I'm actually surprised you didn't know this since stake (where you are active) has this option for years already.  All sites that use betby as their odds provider/live section layout finally added this to the live section, which is pretty convenient if the line moves a lot (like in basketball, tennis, table tennis and so on). I mean I mostly have it on "don't accept any changes" and only sometimes click on "accept higher odds only", never on the last option though.
