You have room for 5 mines. When the 6th one is ready, the auto-clicker looks after the 1st one. You will always have 5 mines ready. Check your balance overnight, you'll see that you got credit for 1 mine.  Or check your balance when the new mine will be ready in 10 minutes, and then check it 11 minutes later. You'll see that your balance has gone up by your production amount.

Only if you bought the two level 3 mines. Each one gives you another 1%.

You only make commission from when your referrals buy mines and play the Lands game. Every time they click you make 6-8% of what the click costs them.

As for the odds of winning on the Lands game, I have found that the more expensive boards have better odds of winning. I've gotten plenty of red crystals from the middle lands, but maybe once or twice from the poor lands. And I don't think renewing the field helps you get better odds. Every click sends a PHP request to the server asking for a result. The result is randomly picked and returned to you for every click. I just won 6 out of the 9 spots in one field: Proof

On the other hand, almost all the money I put into Ore-Mine has come from faucets, so they are a very good way to buy an investment. It's taken me almost a year, but I did it.

Not really. If they don't actually invest in mining then there is no actual profit being generated. They could be just paying from other users funds. The problem with that model is that it will collapse eventually.
