Tezos sites say: This KYC/AML process will be available post-launch. It does not need to be completed prior to the betanet launch.
Does anyone have for how long though? I don't have that many XTZ so I'm not really interested in giving away my identity unless the coin is worth hundreds of dollars at least but I'm afraid that the verification process will be closed by then.

Just have a trusted someone do it for you and give them some of your coin.

Sounds misleading. The amount lost appears to be one baking reward -- not their held funds. So an exchange has a bunch of tezzies and is using the balance to bake / stake / whatever... missing a payment isn't that big of a deal is it?

But baking bad shows "losses -22 317"

The Tezos Foundation is aiming to shut down its own baking operations (all proceeds go to community projects) and delegate all their stakes to community baking operations in the future. This will be done as soon as there is enough capacity. https://redd.it/9wt6wr

Could someone explain what is baking exactly, can we do it while having full control over our private keys (not using an exchange or third party platform) and how profitable it is currently? Is it the equivalent of staking for POS?

It is safe and you are in full control over your private keys. You can delegate your funds to a selected baker (one of many available) and this will increase the bakers share in generated blocks. The public bakers are then sharing block rewards with accounts that delegated to them. https://tzscan.io/delegation-services

It needs to be listed at least in new market exchanges under market conditions.

I am impressed by how "advanced" Tezos is said to be. And that it could beat the top coins if everything planned will roll out successfully. But it doesn't really help that their token name is XTZ though... Imagine business men talking about XTZ throughout the day.

No official is active in this thread to give you proper response it is wasting of time to ask development progress and what is the current state of this project. Only social media is good choice to let know updates and news.
