It can be done but not with all the market that the bookies have. Possibly they can have some special selection and that will require another team for them to handle. May be this does not worth the money and time invested in their platform.

Really not sure why they do not allow this the way I am thinking.

Okay I was wrong about 5 match Test match series. It was 3 match Test series and the first one won by Australia and they were ahead. I think it is risky for the regular bookies. Imagine this way:
