how could we mine this coin?

Before any pool is up (in one or two days some pool admin will start pool) you can solo mine, now the difficulty is very low and you can receive few block rewards.
You need to build XCICOIN from source https://github.com/xcicoin/xcicoin
You will have xcicoind binary and simplewallet binary.
With simplewallet you can generate your wallet and address.
After you will have your wallet and address you can start mining: launch xcicoind, it will sync with xci network, after that type: start_mining your_address
