What should I do to start PoS minting?
Have your wallet unlocked and online.

Then think about it as 1% per year!
 
What is the number of coins?
It's not fixed nor limited.  However the PoW phase ended with 74.5 million coins generated.
 
What is happening when my coins are offline? Am I losing rewards?
You are losing transaction fees and compound interest. Nominal interest will be paid when you find a block.
 
Why is the stake reward so low?
Too much inflation is not good.
