I'm quite certain now: In Eclair, the amount of LN funds that I can send depends on the Bitcoin network fees! A few days ago, had almost no sending capacity left, and received 30000 sat, and could send just over 30000 sat.. The next day, my sending capacity was reduced to about 24000 sat. I'd say that makes a non-custodial wallet like BlueWallet a better choice for using LN with a small balance, as it doesn't reserve anything for closing-fees.

It also looks like the sending capacity in Eclair isn't that accurate: I can't send all at once, but I could send multiple smaller payments.

I don't blame LN, which is still experimental, but it's good to note these things

If you set clear guidelines in the OP, that should be okay. I'd do it for you, but I don't feel like I know or understand enough of LN to host the thread.

Back at my keyboard, I can give a longer reply: They're only asking for and printing the address, the buyer has to create the private key by himself.

I appreciate that coincardgift isn't asking for or creating a private key. This looks good from the start.

I have some thoughts though: you may want to emphasize the need to use an air gapped system (that won't go online afterwards) when generating a private key for proper cold storage, for instance this way:

And, especially when writing down a private key, users should tripple check it after writing it down! It's probably best to actually test the private key (with the same precaustions on an air gapped system again) before funding it. You wouldn't be the first to lose access to funds because of your own handwriting.

Two more things:
The price is quite high just to hold a small amount of Bitcoin. I get that because of shipping, labour and the marker for each order, but as a gift it would be good if the price per card could go down when someone orders for instance 5 cards.
I assume you know Bitcoinpaperwallet.com: it has a nice way of hiding the private key, so it can't be exposed without tampering with the paper wallet. This would improve security.

Can you also explain to me how KYC is going to stop a hacker? Say I opened an account. I can already tell you "Loyce Valenzuela" doesn't have a passport. Now if you'd ask KYC, you have no way of linking my real passport to my private fake online identity. If a hacker sends you KYC-documents from someone called Mark M. Jones, how can you ever know it's not really me? Or, if I send you KYC-documents from my real name (let's use Michael D. Hood for the sake of argument), how can you ever know I'm really Loyce Valenzuela from Bitcointalk?

I'll only respond to this question for now: Have you seen the thread on ChangeNow.io's scam? User ni23457 bought Forum advertising (through theymos' auction) for several weeks in a row, and even continued for a while after he got back his money.
I wouldn't call it a smear campaign, but this got enough exposure to pressure the scammer to return his money.

After several inquiries, Poloniex now responded saying: "the delisting date for NMC has been extended to August 17th 2019".
