The value of BC could have dropped and I would have been responsible for the difference in price. However, thankfully it didn't.

It is right now because of the volatility. You actually have 1.5 hours to pay after confirming your total coins and during that time the price can swing violently. The merchant does not know for sure you'll pay or not afterwards since there's no obligation on your part. This makes it difficult to hedge risk.
