Having full freedom with bitcoin involves risk as well, there's a reason why government was created and that is to monitor it's people for the proper compliance of the laws and regulations set by the state. Gresham's law actually works the other way round

It is the bad money that drives the good money out of circulation. People start hoarding good money whenever possible and spend bad money whenever they get it, and in the end only bad money remains in circulation. In the case of Bitcoin vs fiat, we are already there and have been there right from the start, i.e. Bitcoin is hoarded while fiat money circulates, as it had been doing even before Bitcoin. Nothing has changed
