Why is the wallet not updating with staked transactions?  My balance updates but I have to restart the wallet for it to update the trans list.

No, we don't have an exact timeframe. However, we almost now that around %80 of it finished and that devs are on easy jobs like adjusting backend to frontend. Join our slack community for everything about Shadowcash and you'll get more accurate answers to your questions.
