Actually interesting point was raised in another thread regarding mining - so Karbowanec is possible to mine on GPUs? Or CPU only?
I read that some cryptos have protection from GPU mining (also those who mine with GPU  of course will mine more)

It's just below mining in pool
However I didn't try this option, would be good if somebody can share experience of solo mining

Actually 2 cores but I am considering the purchase of a workstaton with DUAL E5-2660V2 CPU = 10 Cores or a PC with AMD Ryzen 7 1700X = 8 Cores.

I am not sure about the fact the Karbo Wallet Version 1.1.9 can handle with 8 or 10 cores or does it only recognize up to 4 cores as this is now my impression?

Exactly, rather than using built-in miner I'd recommend to use some dedicated software, abovementioned or xmrig.
