At the very least how do I cancel this transactions so I can get my coins back?

It's not on the official transaction record. It's likely a problem with your app -- the coins never actually left your wallet.

If cat shoots up immediately after the difficulty jump this means speculators have been keeping the break on just to buy up as many cats cheap from miners as they possibly could, and this is what I suspect , the cat exchange rate has just been way too flat since it hit the exchange almost like as if there was a central bank keeping it flat, seem to be people with deep pockets doing this.

Just buy all the speculators coins. It's going up through all the sell walls. In less than an hour there will be 4-5x less coins minted. This will probably last many days
at the new dif. Possibly even 14 days.
