Yeah those are my concerns with Escrow too.
Plenty of escrows, rare to find a trusted high value escrow which I why I think CfB would be the best bet, if he ever offers escrow again...

we can make an escrow such as i will send the btc to escrow, and escrow will hold the btc,
when you send the iota to my iota address with transaction as proof, wait some confirms, ect. then escrow sees everything is smooth and releases the btc to your address
