The next AM-level stock won't be a mining company.

I agree.  Anything out there that looks promising?

No, VCs are all over bitcoin now, so it's less likely to see a garage-startup now.

The easiest way to speculate on this topic would be to ask yourself who is currently innovating in a way that satisfies bitcoin's future needs. What does bitcoin need most as a service or product?

A great example would be Gyft.com, except they aren't publicly traded, and likely never will be (in bitcoin at least).

Gaming is another untapped area. Gambling is oversaturated, but still waiting for a player with a large marketing budget.

Consulting, Mutual Funds, who knows!

S.MG is promising, but I fear a long way from fruition.

What would be really interesting is if a small game team, or one of the indie ones that has had some success, decided to come to Bitcoin to fund their next project.

I actually do think S.MG will end up with an honest effort and game(s) to show for it, but an experienced team could really make some waves sooner.
