Didn't find any other thread where I can ask about my problem.
I am not so familiar with Linux but learning every day.

I have installed the GUI Wallet in Ubuntu 20.04 and verify the download. A double-click on it doesn't start the GUI. So I compiled the GUI from source according to this tutorial: https://github.com/monero-project/monero-gui#installing-the-monero-gui-from-a-package
I did everything which stands there. Point 4 says "The executable can be found in the build/release/bin folder."

Quote
  4. Build

    make release -j4

    * 4 - number of CPU threads to use
    * Add CMAKE_PREFIX_PATH enviroment variable to set a custom Qt install directory, e.g. CMAKE_PREFIX_PATH=$HOME/Qt/5.9.7/gcc_64 make release -j4

The executable can be found in the build/release/bin folder.
https://github.com/monero-project/monero-gui#installing-the-monero-gui-from-a-package

But there is no executable file (at least I don't recognise anything there). What do I have to type in the terminal for starting the wallet?

Can you please suggest a safe decentralized exchange where I could sell/buy my Monero for other cryptocurrency ?

The closest to be decentralised exchange is BisQ. https://bisq.network/getting-started/  But there is zero logic not use centralised exchanges if they are reputable. Yes there is a risk. But if you send coins, exchange and withdraw. There is very small time frame that something goes wrong.
There are plenty exchanges to trade Monero to crypto. TradeOgre, Binance, Poloniex., ...
There are much lees exchanges offering fiat pairs.

Im glad Ive had a large position in ETH and some defi coins, but moneros price action has been disastrous. Its also an older coin and they usually dont do as well as the newer stuff. But, this is monero, not your typical coin. Which is puzzling why the price is so low for this long. When will it break out?

I have spent a few Monero in the last few weeks.

Honestly it was quicker and easier than bitcoin.

Maybe the seller respected the payment method more or something.

XMR has been faster and more economical (by wide margins) than BTC for quite a while.  I use XMR.to if I must pay out BTC.

I dont think should be any change. There are a lot alternatives to xmr.to.  What could happen is that more merchants accept Monero directly. It is definitely a good reason to ask Bitcoin merchants right now to add Monero payment option.

^  I’m wondering what could be binaryFate’s reason behind the decision to close shop.  Was there outside pressure?  Maybe it’s a sign of things to come concerning XMR and other privacy centric cryptos?

From their blog post:  ‘We believe in full transparency of our service (not of blockchains!). The only way to respect our users is to be transparent about our choices and our actions, so our users can make their own choices. We believe this is the best way we can protect our users and the community and move it forward. As such, and to help the Monero community to assess our position and decide for yourselves whether or not you are comfortable with our policies, we will start issuing regular transparency reports. Our transparency reports will describe any requests XMR.to has received from government or regulatory authorities and how we have responded or otherwise reacted.’.

^  It think that was right before they announced they were closing shop.

https://xmr.to/blog/our_first_blog_post/

It feels like the government or some regulatory authorities are starting to poke around the service.  I mean I’m pretty sure not all conversions done thru the site are exactly legal.

Anyway yeah...  It’s sad to see it go.
