Les tokens utilisables avec la blockchain ETH (réseau ERC20) sont en général disponibles sur d'autres blockchains aussi : Polygon, BEP20/BSC, Avalanche etc...etc..
Ci-dessous un aperçu des blockchains reconnues par etherscan.io pour te donner une idée :



ETH est parmis les plus populaires, donc la plupart des tokens y seront disponibles.
Après, pour comprendre pourquoi un token "dépend" d'une blockchain x ou y, ça revient à se demander ce qu'est un token :
(source site de Ledger, lien ci-dessous)


Pas sûr de bien comprendre ce que tu recherches mais token ≠ blockchain. Les tokens sont de simples smart contracts, pas des blockchains eux-mêmes.

Tu peux lire l'article suivant peut-être : La différence entre les coins et les tokens

Exemple, le token USDT.
Si tu l'utilises sur la blockchain ERC20 (ETH), tu vas payer les gas fees relatifs à cette blockchain, et tu auras donc des transactions assez couteuses.
SI tu l'utilises sur la blockchain Polygon, souvent les fees seront moins chères qu'un centime d'usd.
Les temps de confirmation sont également impactés par la blockchain, certaines sont plus rapides que d'autres. Donc c'est bien le même token mais avec différents couts de transactions et délais lors de l'utilisation..

Pourquoi choisir telle ou telle blockchain ? Selon ses priorités, quelle importance tu accordes a l'équipe de devs qui les gèrent, leur centralisation ou non (exemple lors d'un hack de la BSC chain, Binance avait stoppé la blockchain le temps d'investiguer, veux-tu cela pour tes tokens?), le cout à l'utilisation, sa réputation etc...etc...
