Because most people are looking for privacy and that can be found through use the anonymous coin. AFAIK ether has already created an cooperation with zcash and that means if the old protocol of zcash has already implemented to the ethereum. But i don't know if does ethereum want to put zkstarks to the ethereum platform too.
