Hey man, I was looking at that for, like, a really health-conscious friend. Or whatever. I can totally eat all the casein I want. Such a druggie. It does tie in though with old wive's tales ( or are they?) -Bread 'makes you sleepy'; Cheese 'gives you vivid dreams'. Grains and dairy are generally two of the hardest foodstuffs to digest. My friend on a medical diet tells me that the enzymes responsible for breaking them down are found on the tips of the villi which weaken as we age. TMI but there you have it.
