why did price double in the past few days ?
Lots of speculation probably. Price will drop again and rise, as do all altcoins. Monero probably has a big future ahead of it though as it is directly competing and improving over Bitcoin on some important aspects like privacy.

Monero is the toughest nut to crack afa the world in general knows. Meaning it is the safest coin atm afaik.
