As I am going to be a merchant accepting bitcoin, I cannot hold bitcoin because I don't want to risk big swings in exchange rates. I plan on cashing out for dollars from bitcoins at the end of each business day.

Bitpay will be a better option for you then.
You don't need to sell your bitcoin yourself, but Bitpay will do everything for you.

So, I have put together a basic PC just for CPU mining. I joined a DogeCoin pool and left my PC mining all night which was about 9-10 hours and made only around 1.5 DogeCoin. I can't even extract the coins until I have made 500. This really doesn't seem viable, unless there are new coins with lower difficulties I can mine?

For doge, cpu-mining is very inefficient.
You should go for some CPU-coin for your CPU.

Ideally I wanted to use a cheap motherboard and CPU setup to just CPU mine so I don't have to buy a graphics card and to keep it as cheap as possible. From what I have been reading, 'script' coins are easier to mine for? So, going by what I have stated, is it possible and if so which coin(s) could I mine (list in link).

You should mine scrypt coins using GPUs, and you can mine CPU-only coins with your CPU as well.

I tried Coinbase and it sucked. Tried for a week to get credit card and identity verified but could not. Zero customer service. Only got copy and pasted answers to my emails and no phone number.

Where else can I go to buy large quantities of bitcoins and sell them quickly in the USA?

What about localbitcoins? Be careful how much you sell though, or you might catch the attention of the Bitcoin Police  Cheesy.

localbitcoins is good, but OP need to do lots of trades if he really wants to trade a large quantity of bitcoin...
